  11. Get 1 tbsp oil

Truth be told, I hadn't even tried chorizo until about a year ago when my friend Jen introduced me to it. Vegan chorizo tends to behave quite differently from its non-vegan counterpart. So, instead of cooking the chorizo in the stew, we recommend frying the slices on their own before adding to the final stew. This allows the vegan chorizo to get nicely crisp, rather than going soggy from cooking in the stew.

  1. Prepare all the ingredients
  2. Heat a pan with the oil, onions and garlic till softened. Add the chorizo and cover to brown, about 4mins, uncovering to turn the chorizo half way.
  3. Add the kidney beans and both types of paprika and cook for a further 3 minutes covered. Add a splash of water if the mixture dries out.
  4. Add the rest of the ingredients and cook till thick. Season well with salt and pepper.

Next add in the vegan chorizo and cook for a further few minutes. After this has softened, add into the pan the cherry tomatoes, sweet potato and chickpeas and stir together. A winter dish truly living up to the name. If chorizo is a little too intense spice-wise for you, please just go for your favorite vegan sausage.
